Corrections noted:
- ceiling and wall on beam in kitchen has been repaired
- cover for light in kitchen has been replaced
- cleaning for hood vent has been scheduled for early next week
- hand wash stations fully stocked
- installation of durable/cleanable flooring and painting of walls upstairs has been completed for the areas where food and food equipment are stored
- cooling reviewed with Regional Chef for the roasts. Two roasts are usually cooked for the buffet on the weekends, but the second roast (currently stored in the kitchen on a tray at room temperature) is not always used. Left over roast is portioned down and then put into the cooler. Chef stated that they will keep the half of the first roast and second roast in a thermal container in the kitchen to keep them above 60C longer to ensure that they do not stay in the upper danger zone (60C-20C) longer than the maximum two hours.
