Observation (CORRECTED DURING INSPECTION): 1.No sanitizer available at front bar area at start of inspection.
2. Sanitizer buckets noted in back kitchen in 2 locations at 200 ppm or greater. Wiping cloths noted on counter at 0 ppm chlorine.
Corrective Action(s): Ensure sanitizer is available in all areas where food is prepared (back kitchen and bar areas) at 100 - 200 ppm chlorine. 1 tsp bleach per 4 L water. Keep wiping cloths in sanitizer solution to ensure when cloths are used they are sanitizing surfaces.

Observation: 1.Meat slicer noted with meat debris on unit - in guard and behind blade.
2. Dirty tray noted in front bar cooler - sticky sauce noted
Corrective Action(s): Ensure all equipment and food contact surfaces are cleaned and sanitized after use. Do not put utensils, equipment or materials away with food debris or dirty. Clean and sanitize meat slicer. Tray was discarded during inspection.
Correction date: immediately.

Observation: Grill scraper handle covered with white tissue and held in place with elastic band. Covering broken plastic handle.
Corrective Action(s): Replace scraper, handle is no longer cleanable. Tissue is not a suitable material to use in the kitchen even if material is changed daily. Material must be smooth, durable, easy to clean and non-absorbent. Replace scraper.
