-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Front service display cooler was at 4C.
-Kitchen prep cooler was at 4C (top and bottom).
-Upright refrigerator/freezer was at 4C/-18C.
-Hot holding was greater than 60C. Foods cooked to greater than 74C prior to hot holding.
-Cooked chicken cooled rapidly in single layers. Chicken made this morning was rapidly cooled and was at 4C.
-High temperature dishwasher had a final rinse temperature of 79C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Quats sanitizer dispenser was at 200ppm (2-compartment sink).
-Quats sanitizer pails and spray bottles labelled and tested at 200ppm. Sanitizer pails changed every 2 hours - time stamps present on containers. Sanitizer test strips available on-site to verify Quats concentration.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Manual potato cutter was found to be clean and sanitary. Staff are properly cleaning and sanitizing the equipment after each use.
-General food storage practices good at the time of inspection. Raw meats stored separately from ready-to-eat foods. Foods stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and hot air dryer.
-FOODSAFE Level 1 equivalent valid until July 1, 2026.
