Comments

- Hand washing sinks properly supplied with hot/cold running water, liquid soap, and paper towels.
- Bleach sanitizing solution available in sanitizer pails at 100 - 200 ppm (chlorine residual).
- Low-temperature chemical dishwasher in kitchen measured 50 ppm (chlorine residual) at the dish surface after final rinse.
- Low-temperature bar glasswasher measured 50 - 100 ppm (chlorine residual) at the glass surface after final rinse.
- Chlorine test strips available onsite for monitoring.
- Walk-in cooler, prep coolers, and bar coolers measured 4C or colder and were equipped with separate thermometers. *Upright glass door cooler was measured at 8C and was not storing any potentially hazardous food items. See violation code 308 above.
- Walk-in freezer and undercounter freezer temperatures satisfactory.
- No hot-holding at time of inspection.
- All sinks maintained in sanitary conditions. *Mop sink requires splashguards on both sides.
- Dry storage area organized. Ensure to store all items off the floor and in pest-proof bins with secure lids.
- Food storage practices satisfactory.
- Food-related equipment maintained in sanitary conditions (ice machine, scoop, ventilation canopy, etc.)
- General sanitation satisfactory.
- Pest control in place. No signs of pest activity noted at time of inspection. *Back screen door to be properly sealed (see violation code 305 above).
