Coolers at 4 degrees C or less.
Deli freezer remains empty and turned off.
Hot holding at 60 degrees C or more.
Probe thermometer available for internal food temperature checks.
Daily temperature logs available.
Internal temperature of recently cooked food (poultry pieces) probed at time of inspection and measured over 74 degrees C (165 degrees F).
Food is protected from potential contamination. Portioned food is covered and labeled. Raw and ready to eat food stored in separate areas (raw not above ready-to-eat).
Hand washing station are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
Proper hand washing practices were observed at time of inspection.
Three compartment sink supplied with hot and cold running water. Detergent and sanitizer available from dispensing unit. Quats test strips available.
High temperature dishwasher achieved 73 degrees C at the utensil surface during the final rinse (required: 71 degrees C or more at the utensil surface).
Sanitizer available from dispensing unit and in labeled spray bottles at 200 ppm quats.
In-use equipment, including deli slicers, are cleaned and sanitized at a frequency of every four hours or sooner.
Stored equipment and utensils in sanitary condition.
No signs of pest activity observed at the time of inspection.
