Observation (CORRECTED DURING INSPECTION): In use utensils (pizza cutting knives) are not cleaned and sanitized in an adequate frequency. Operator has used same in-use utensils today since open (>4 hours). Operator has removed aformentioned utensils from work area. Ensure in-use utensils are cleaned and sanitized, or replaced with clean utensil every 4 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): The fries cutter (used to chop onion, tomato, etc.) was stored away with visible dry food debris. The operator disassembled the equipment and removed from work station. Ensure all food contact surfaces are cleaned and sanitized adequately to remove all food debris.

Observation: 1. An open bag of flour was observed in its original packaging.
2. Bleach sanitizer was excessively concentrated. Highly concentrated bleach sanitizer may cause chemical contamination of food.
Corrective Action(s): 1. Transfer flour to a food grade container with tight fitting lid. Correct this by: As soon as possible but no later than May 15, 2021.
2. (Corrected during inspection) reviewed bleach sanitizer preparation with the operator. Ensure no more than 2ml of bleach is added per 1L of water.

314 - Operator has not provided acceptable written sanitation procedures [s. 24]
Observation: During the initial inspection, the inspector observed two equipment (dough flattener and cheese shredder) that were not present in the health approval application. The inspector requested a written sanitation plan for these two equipment; however, the plan has not been submitted.
Corrective Action(s): Submit a revised sanitation plan. Correct this by: May 19, 2021
