Observation (CORRECTED DURING INSPECTION): Noted small about of cooling chicken in domestic refrigerator at approx 35C. Operator said it has been cooked and cooled at temperature and transferred to cooler unit within half an hour. Operator spread chicken out on tray to further cool at time of inspection.
Corrective Action(s): Ensure foods are cooled from approximately 60C to 20C at room temperature within 2 hours. Then transfer to cooler unit to cool from 20C to 4C within 4 hours.

Observation (CORRECTED DURING INSPECTION): Deli meat and cheeses in domestic refrigerator in back food preparation area was at 6-8C internal temperature - relocated to functional cooler unit.
Corrective Action(s): Ensure cold potentially hazardous foods are stored at 4C or less.

Observation: A) Paper towel holder on wall at hand sink in back food preparation area was broken
B) Produce container in domestic refrigerator was broken and held together with duct tape
C) Domestic refrigerator was at 11C-12C. Elevated temperatures may be due to cooling chicken at 35C and over stocking on top shelf.
Corrective Action(s): A) Fix paper towel holder on wall and place paper towel in dispenser.
B) Remove tape and repair/replace produce dispenser.
C) Cool hot foods properly at room temperature before transferring to cooler unit and do not over stock. Fix/adjust domestic refrigerator if needed and do not store perishable foods in cooler unit unless able to maintain 4C or less.

All hand wash stations were fully equipped with soap, paper towel, hot and cold running water. See violation code 308A re: placing paper towel in holder
With exception of domestic refrigerator in the back food preparation area, all other coolers 4C or less.
Freezers -12C to -16C
No hot holding available at time of inspection. Operator said that they sometimes provide soup.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Meat slicer appeared clean at time of inspection.
Ice is made in trays, transferred to a container and kept in freezer unit. No ice machine on site.
Chlorine sanitizer in spray bottles 100ppm. Reminded staff to use paper towel to wipe food contact surfaces, otherwise reusable wiping cloths are to be stored in sanitizer solution to prevent microbial growth.
High temperature dish washer achieved 71C (with thermolabel).
Multiple scoops available for gelato. Operator said they are put through the dishwasher after each use. Premises was approved without dipper well.
