Observation (CORRECTED DURING INSPECTION): 2 Trays of potato wedges in the hot-holding unit measured at an interneal temperture between 40-44.8C.
Corrective Action(s): Increase hot-holding unit. Use 2 trays of potato wedges in the hot-holding unit within 1 hour. All hot potentially hazardous foods must be transfered immediately after cooking. Do not allow it to cool prior to transfering to hot-holding unit. All hot potentially hazardous foods must be hot held at 60C or higher.

Observation: Handwashing sink paper towel dispenser next to the 3-compartment sink is not dispenser paper towel. Paper towel available near the unit. Walk-in freezer measured at -8.5C air ambient temperature.
Corrective Action(s): Service the paper towel dispenser to dispense paper towels. Service walk-in freezer to hold an air ambient temperature of -18C or lower. Corrected by: 1 month.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs sanitizer buckets, dispenser measured at 200ppm. 3-compartment sink available. High-temperature dishwasher measured at 82.7c final rinse.
Prep cooler, undercounter cooler, walk-in cooler, milk dispensers and ice cap machine compartment measured at 4C or lower. Hot-holding units measured at 60C or higher.
Food observed to be stored at least 6 inches off the floor. Ice machine observed to be sanitary condition.
No signs of pests observed.

NOTE: Ensure to monitor hot water tank as handwashing sinks hot water faucet observed to take approxiamately 3-5 minutes to dispense hot water. Temperature logs were not noted online for December 7, 2022 this morning (i.e.: 6am). Ensure to maintain temperature logs as per Food SAfety Plan.

Overall, facility is well organized and maintained.
