Observation: All food must be placed in sealed, pest proof containers. Sugar and flour specifically were in bags and must be transferred to sealed containers to prevent contamination.

Observation: Several live cockroaches observed around the dishwasher and the sink next to the dishwasher. Live and dead cockroaches found in two sticky traps.
Corrective Action(s): Ensure that pest control comes on site and treats for cockroaches as soon as possible.

Comments

-Prevent the pooling of water throughout the kitchen to help prevent pest activity.
-Follow up inspection next Wednesday.
-Clean the kitchen thoroughly with a bleach solution.

The kitchen will open up again for the season late next week.
All coolers were < 4 C.
Freezers were < -18 C.
Sinks supplied with hot and cold water, soap and paper towels.
Dishwasher reached 75 C at the plate level.
