- Freezer was -22 C
- Gelato freezer -16 C
- Hot holding was 60 C or hotter
- Hand sinks had liquid soap, paper towel, hot and cold water
- spray bottles had 200 ppm chlorine
- wiping rag was in 50 ppm chlorine after 4 hours, increase changes to every 2 hours
- dishwasher had a final rinse of 100 ppm chlorine
- 1 mouse in trap at time of inspection, no droppings noted and pest control is in place. Continue to monitor for activity
- General sanitation is satisfactory
