Comments

- Hand sinks in bar area and in food prep area were properly supplied with hot and cold running water, liquid soap, and paper towels
- Dishwasher dispensed greater than 50 ppm to dish surface, detected after rinse cycle. Chlorine test strips available for monitoring - ensure to check dishwasher concentration daily.
- Undercounter bar cooler measured at 3C, cooler in food prep area measured at 4C
- Two freezers measured at -18C or colder
- Accurate thermometers available
- Three-compartment sink in food prep area for manual dishwashing maintained in sanitary conditions. Sink plugs available for each compartment.
- Quat sanitizer solution available at 200 ppm from dispenser and in spray bottles. Quat test strips available for monitoring. *Ensure bar area is equipped with a bottle of this sanitizer solution as well.
- Mop sink closet maintained in sanitary condition
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection
*Ensure any dishes returning from customers are washed, rinsed, and sanitized in the dishwasher.
