Observation: There is a build up of flour and dirt on floor in hard to reach areas (under shelves etc.). Walls/ceiling require cleaning.
Corrective Action(s): Follow a routine written cleaning schedule. Deep clean premises, including under shelves etc. Clean walls. Keep ceiling clean.

Comments

Operator has Food Safe Level 1. Check expiry date (2020?) and renew before it expires - www.foodsafe.ca Refresher course.
****Keep copies of your food safety plan and sanitation plan on site. Ensure that staff are trained in the standard operating procedures.
Reminder to fully wash (using detergent and warm water), rinse, and then sanitize all equipment and food contact surfaces.
Chlorine sanitizer is used to sanitize (200ppm chlorine detected in solution) - good. Store wiping cloths in sanitizer as these need to be sanitized as well.
Coolers - front display went down to <4 C, new salad prep cooler <4 C, line coolers and upright coolers - all at 4 C or colder. Do not overstock coolers as it interferes with air flow.
Keep records of daily cooler temperature checks. An additional thermometer is recommended for inside of the front display cooler.
No hot holding.
Hand washing sink has hot/cold water, liquid soap and paper towels in dispensers.
Chlorine sanitizer - good.
Dishwasher has hot water to wash and a final chlorine sanitizing (50ppm detected) rinse.
