Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- 3 door freezer at -22C
- 3 door cooler at 4C
- Prep cooler at 4C (top) and 5C (bottom)
- Chest freezer at -28C.
Ice build-up noted in the chest freezer. Consider defrosting/service
- Undercounter cooler at 4C
- Front display cooler at 4C
- Front undercounter cooler at 3C

Hygiene and Sanitizing:
- Hand wash station in the front service area was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher available and was able to dispense ~200ppm bleach solution after priming.
- 2 compartment dishwashing sink available and is also used for handwashing instead of the white handwashing sink located nearby. Paper towels and liquid soap were present.
- Meat slicer was clean. Staff stated that the slicer is disassembled for cleaning and sanitized with bleach solution.
- Ice machine had visible build-up of grime/dirt on one of the wall.
Ensure that the ice machine is cleaned and sanitized prior to use.
- Washrooms maintained in good sanitary condition.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
