Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1) The exhaust canopy and filters had accumulated grease on them. The grease is a fire hazard and could fall into food. The service sticker indicated cleaning was due in April 2022, this is overdue for cleaning.
2) The sides of equipment in the kitchen and server area, have accumulated food on them. This will attract and harbor flies and rodents.
Correction: 1) Call a professional company to clean the exhaust canopy and filters. Have staff clean any surface of the exhaust canopy and filters, they can reach/access, on a regular basis between professional cleanings.
2) Pull away equipment for the wall and other equipment, tables, & shelves so the sides of all equipment is cleaned. Ensure this is done on a regular basis.

A second follow-up inspection was completed:
- The low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle. No manual sanitizing of dishes is needed. Use chlorine test strips at least 3 times a day to ensure the concentration of chlorine is correct.
- Exhaust canopy and filters have been professionally cleaned. Next cleaning due in November 2022. Ensure the exhaust filters are cleaned every month by staff.
- The walls and floors behind coolers and tables in the cook station area have been cleaned.
- The glasswasher in the bar had [I2] of 12.5ppm during the rinse cycle. Good.
- Hand sink in bar area had running hot and cold water, liquid soap, and paper towels.
- Found perishable items being stored in the breakfast toppings assembly cooler. No perishables shall be stored in this cooler until it can maintain 4C or colder. The next time perishable foods are found above 4C, they will be thrown away.
- Found butter scoop stored in a clean food container. Inform staff to stop this practice, they must use the dipper well to store the butter scoops as constantly cold running water keeps the scoops from allowing bacteria grow on it.

ACTION:
1) Declutter the premises. Remove and throw away items that have not been moved or used in the last 6 months and/or broken equipment. This will mean less items in the store to move and clean.
2) All items must be stored off the floor on shelves or racks. This will make it easier to clean the floor and under shelves.
3) The floor in the walk-in-cooler, under the racks and shelves have accumulated food along the base of all walls. Wash and clean these areas to remove the food debris.
