Observation (CORRECTED DURING INSPECTION): At the time of inspection meat department not provided with an approved food contact surface sanitizer solution.
Corrective Action(s): Ensure during operation the meat department is provided with a 100ppm bleach sanitizer solution to sanitize food contact surfaces and food processing equipment.

Observation (CORRECTED DURING INSPECTION): Observed 2 out of the 3 sinks in the back area being used to thaw whole chickens.
Corrective Action(s): Ensure any frozen potentially hazardous foods are thawed under cold running water or in the cooler. All thawing whole chickens relocated to the walk in cooler.

Routine inspection:

At this time the large display cooler is turned on only on weekends. Ensure unit is at or below 4 degrees C before displaying any cold potentially hazardous foods.
Display freezer at -22 degrees C.
Small freezer at -18 degrees C.
Back area walk in cooler at or below 4 degrees C. Freezer section at or below -18 degrees C.
Additional walk in cooler not in operation. Unit is used to stored prepackged non potentially hazardous foods.
Back area provided with a 3 compartment sink.
Hand sink in processing area provided with liquid soap and paper towels.
Front area provided with a 2 compartment sink.
Band saws and grinder is cleaned and sanitized after use.
Receipts for meat products available upon request.

Note: raw lamb and chicken sausages are still made onsite. After mixing the meat and spices, mixture is placed into casing, then placed in the walk in cooler then the walk freezer to be frozen. Labels provided and the product is sold only at this location.
