Observation: Bleach solution not made while food is being prepared.
Bleach is available but in the dry storage area. Too many items in the way to access bleach.
Owner is aware to come and make some bleach solution for cleaning - phoned during the inspection.
Corrective Action(s): Ensure that bleach solution is made and available for cleaning when food is being prepared.
Clean and sanitize all surfaces.
Make this more accessible - e.g. store away from food in the washroom.

Corrective Action(s): Remove all items that are unnecessary for food premise or that are broken.
Remove all greasy items or unclean items with food debris.

Observation: All areas - floor, wall, ceilings, vent hood, underneath grill area has food debris, food splatter, grease and are in need of deep cleaning.
Grease accumulation under grill area. Last cleaning dated Nov. 4, 2023.
Corrective Action(s): Ensure this was completed and then call them back again to clean this area.
Pull out the equipment and clean underneath the grill lines.
Clean and sanitize wall, floor, ceilings.

Comments

Food Handler Hygiene
o Hand wash station in kitchen is fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C

Tiffin Service
-Food is portioned into containers for delivery and this process is finished by 2:30PM.
-Delivery happens between 4 to 4:30PM.
-Meals are stored in bags at room temperature.
-This is on the margin of the 2hr mark. Highly recommend that this be portioned closer to delivery time, between 30min-1hr before delivery.
-Items should always be either kept hot above 60C or cold below 4C and not stored at room temperature.

Food Processing and Food Protection
o Food Storage - Majority of food items are stored in covered containers.

Maintenance and Sanitation
o Storage of chemicals is separate and away from food
o Pest control - there are no signs of pests at the time of inspection.
