Observation (CORRECTED DURING INSPECTION): Sliced oranges, onions and cheese noted at 15 C at tortilla station
Corrective Action(s): Ensure potentially hazardous foods (PHFs) are stored at or below 4 C to prevent pathogen growth. Cut fruit and veggies become PHFs and must be kept at or below 4 C. Slices, onions and cheese inserts discarded.

Observation (CORRECTED DURING INSPECTION): 1. Low temp dishwasher not sanitizing dishware - 0 ppm chlorine detected. Sanitizer bottle empty
2. No wiping cloths available at unlabelled sanitizer bottles
Corrective Action(s): 1.Ensure low temp dishwasher is dispensing 50 ppm chlorine at the dish. Replace sanitizer bottle for dishwasher. Sanitizer replaced and sanitizer of 100 ppm chlorine detected at the dish.
2. Ensure all sanitizer bottles are labelled and clean wiping cloths are available to sanitize surfaces.

Observation: 1. Raw ground beef stored next to milk and above sour cream container in standing cooler in storage suite.
2. No light tube covers for 2 sets of lights in kitchen.
Corrective Action(s): 1.Ensure raw meats are stored under or away/separate from ready to eat foods. Re-organize cooler.
Correction date: 1 day
2. All lights must be covered with protective sleeves or cover to protect food from physical contamination. Operator is looking into alternative light fixtures as current fixtures no longer have replacement parts available. LED light fixture purchase and acceptable replacement.

Observation: Dry storage room and neighboring suite used as storage for extra equipment and supplies. All cluttered in both areas.
Corrective Action(s): Ensure all equipment not required for operation are removed from facility to allow for cleaning, pest monitoring, and prevent pest harborage areas. Repeat violation. Operator says in the new year extra equipment will be removed from premises.
