Comments

-The wash/rinse temperature gauges on the exterior of the high temperature dishwasher are inaccurate. Recommend purchasing a max hold waterproof thermometer or thermolabels for checking the dishwasher.
All coolers were < 4 C.
All freezers were < -18 C.
No evidence of pests.
Hot held foods were > 60 C.
Hand sinks were supplied with hot and cold water, soap and paper towels.
Ice machine cleaning procedures discussed.
The dishwasher final rinse cycle reached 73 C at the plate level.
General sanitation was satisfactory.
