203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation: 1) Noted a pot of braised beef left out at room temperature. The temperature of the food was @ 24 deg. C.
2) The intestine (pork) container was measured at 37 deg. C in the cooler.
--> Both the beef and the intestine dishes were cooked the day before and left out at room temperature overnight for cooling.
--> This is not an acceptable cooling method. Discarded during inspection.
--> All cooked food must be cooled properly from 60 deg. C to 4 deg. C in 6 hours.
--> Directed the owners to cool down using the ice water bath method. then transfer into the cooler overnight.
--> The cooling and reheating of all perishable food must be done "ONCE", then the remainings to be discarded.
DO NOT cool and reheat more than "ONCE".
