Observation (CORRECTED DURING INSPECTION): Three bottles labeled as sanitizer and located near the back prep area were measured at 50 to 100 ppm quaternary ammonium compounds (quats).
Corrective Action(s): Bottles emptied, refilled at dispenser, and re-tested (200 ppm quats). Ensure that at all times, sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (200 ppm quats or per manufacturer).

Routine health inspection conducted.
- Coolers (including retail area deli coolers) at 4 degrees C or less*
*Exception: Two prep area under counter coolers measured approx. 5-6 degrees C; coolers in use as prep was taking place at time of inspection. Ensure temperature returns to 4 degrees C or less.
- Freezer at -18 degrees C or less.
- Hot holding internal food temperatures at 60 degrees C or more.
- Raw and ready-to-eat properly organized. Food items protected from potential contamination.
- Sushi rice pH measured at 4.0.
- Probe thermometers on site.
- Hand sinks accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Single use gloves available (non-latex).
- Ware washing sinks supplied with hot and cold running water, detergent, and sanitizer at 200 ppm quats (dispensing unit).
- Reviewed cleaning and sanitation of in-use equipment (e.g. deli slicers). No concerns at time of inspection.
- No signs of pest activity. Premises is serviced by a pest control operator on a monthly basis.
Note: Some pooling liquid observed on floor near cooking units and walk-in chicken cooler. Ensure floor is cleaned.
