Meat:
-Meat display case was at 4C.
-Walk-in cooler was at 1C.
-Temperatures are checked and recorded daily.
-3-compartment sink Quats sanitizer dispenser was tested at 200ppm.
-Handwash station in meat area easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat saw is cleaned and sanitized every hour and disassembled for cleaning and sanitizing nightly.
-Meat grinder stored in the walk-in cooler cleaned and sanitized at the end of the night.
-Foods properly stored off the ground and protected from contamination.

Fish:
-Fish display case was at 4C.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm. If sanitizer bottles are changed out, ensure they are labelled to identify the contents.
-Foods properly stored off the ground and protected from contamination.
*Ensure shellfish tags are kept for 90 days for recall purposes

General:
-General sanitation good at the time of inspection.
