Observation (CORRECTED DURING INSPECTION): Staff member was observed tasting food with a metal spoon, followed by washing with water.
Corrective Action(s): Utensils must be washed and sanitized after a staff member samples a food item to prevent direct contamination of foods. Continued non-compliance will result in the issuance of a violation ticket. Staff was instructed to washed and sanitize spoon at the time of inspection. Staff were made aware of the requirements by the operator.

Comments

-Follow-up inspection to May 18, 2022.
-Hot potentially hazardous foods are rapidly cooled in a water bath, followed by transferring the foods into the walk-in freezer.
-Knives were found to be stored in a sanitary condition at the time of inspection.
-Meat slicer was found to be clean and sanitary. Staff are properly disassembling the slicer for cleaning and sanitizing after each use.
-General food storage practices were good at the time of inspection. Raw meats were found to be stored below/separately from ready-to-eat foods. Did not observe foods being double stacked at the time of inspection.
-Shelving units have been replaced and were found to be clean and sanitary. Ensure shelving units are cleaned and sanitized on a regular basis.
-Spray bottles were properly labelled to identify their contents. Ensure containers are relabelled as needed.
