Observation (CORRECTED DURING INSPECTION): Mesh noodle strainers observed to be stored in container meant for holding skimmed off broth. Staff stated it was 'cleaned' when immersed in broth.
**Corrected during inspection** Strainers cleaned in high temperature dishwasher when identified.
All food contact surfaces need to be maintained and stored in a sanitary manner.

Observation (CORRECTED DURING INSPECTION): 1. Handwashing stations must be used for handwashing only.
**Corrected during inspection** Educate staff to use handwashing sinks for handwashing. Do not use handwashing sinks as dump sinks or block access to handwashing stations.
2. Kitchen handwashing station observed to be obstructed with large stock pots. This issue has been noted Feb 2022.
**Corrected during inspection** Handwashing stations must always be available for handwashing.

Observation (CORRECTED DURING INSPECTION): Mesh noodle strainer baskets observed to be stored on wire extended between two fire suppression lines.
**Corrected during inspection** Baskets removed from wire.

Do not store food contact surfaces on fire suppression lines. Lines are not sanitary, and may damage lines.

Observation: *REPEAT* (Since April 2023) Raw meat observed tob e stored at room temperature in front of dipslay chest freezer. Operator stated meat was thawing.

1. under cold running water,
2. in cooler,
3. in microwave (if cooked immediately afterwards).
