Routine inspection with the presence of the owner.

Sanitation
- General sanitation - GOOD!
- 4 hand sinks and washroom were fully equipped with hand soap, paper towel and hot/cold running water.
- 2 dishwashers ( bar area, kitchen) reach 71C at dish level.
- 2 Quats spray bottles with 200ppm Quats
- Ventilation hood was in a sanitary condition. Next service Sep 22, 2022. Staff clean and sanitize the filter every other week.
- Ice machine in a sanitary condition. Scoop stored on a hook inside the ice machine.
- In the bar area, drink dispenser nozzle properly cleaned and sanitized, no fruit flies observed.

Temperature controlled unit
- Bar cooler 1.7C.
- Prep cooler top and bottom < 4C.
- Walk in cooler 3.2 C
- Walk in freezer -18.2C
- No hot holding onsite as the restaurant opens at 4PM.
- Cooked Sauce chilling in 2 shallow containers on the table, and 3 buckets in the sink submerged with cold water and ice. Food operator stirred sauce for a quicker cooling process.
- Food properly thawed in the cooler.

Other:
- No pest activity observed during inspection.
- Food properly stored with covers or lids.

Attention: (1) Recommend the owner to get chilling wands to achieve rapid cooling process.
(2) In the walk in cooler, please raise the bottom shelving level to 6 inches off floor if possible to facilitate cleaning.
(3) No garbage bags used for food.
(4) Clean the back of the deep fryer to prevent fire hazard.
