Observation (CORRECTED DURING INSPECTION): Vegetable chopper and vegetable slicer were both observed with food debris in the back preparation area. It was stated that vegetable slicer is used once per day and that its last use was approximately three hours ago.
Corrective Action(s): Above-noted equipment was placed into the ware washing sinks at time of inspection to be washed, rinsed, and sanitized. Ensure that equipment/utensils/food contact surfaces are properly cleaned and sanitized after each use to limit potential contamination of food.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Back hand washing station was completely obstructed by a stack of pizza pans located within the sink at the time of inspection.
Corrective Action(s): Pizza pans removed by staff. Ensure that hand washing station remains easily accesible at all times to facilitate proper hand washing. Do not store any items in the hand washing sinks as they are designated for hand washing only.

Observation: No light shield observed at light fixture located near walk in cooler entrance.
Corrective Action(s): Ensure light shield is in place at above-noted light fixture to protect food in the event of bulb breakage. Date to be corrected by: January 4, 2018.

Observation: Food and other debris observed in the following areas:
1. On floor located underneath preparation cooler and adjacent work tables
2. On floor located underneath cutting station
Corrective Action(s): Ensure the above-noted areas are properly cleaned to remove all debris. Food debris may potentially attract pest activity. Date to be corrected by: December 19, 2018.

Routine inspection conducted:

- Walk in cooler at 2 degrees C. Food is stored off the ground.
- Preparation cooler at 2 to 3 degrees C (above) and 4 degrees C (below)
- Beverage cooler at 4 degrees C. Note: No potentially hazardous foods or beverages.
- Thermometers available for cold holding units
- It was stated by staff that pizza sauce stored at ambient temperature is used within 10 hours (food safety plan indicates a 10-hour ambient temperature holding time limit)
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Quaternary ammonium compounds (quats) sanitizer available from dispenser at three compartment sink and in labeled spray bottles at 200 ppm quats
- Three compartment sink supplied with hot and cold running water, detergent, sanitizer, and built in drain plugs for manual ware washing
- FOODSAFE requirements met at time of inspection. Certificate produced by staff member on site expires in 2020.
- No signs of pest activity observed
- Permit posted at front
