- new stand up freezer purchased. Ambient air temperature below -18 degree Celsius
Observed rice cooling at room temperature. Rice temperature above 60 degree Celsius. Reminder all potentially hazardous foods must be cooled from cooking temperature / hot holding temperature to 20 degree Celsius within 2 hours and from 20 degrees Celsius to 4 degree Celsius within 4 hours.
- ensure the old washroom used to store chemicals is decommissioned adequately and converted to food storage area. Install shelves.
