302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. No food-grade sanitizer was prepared although food preparation had begun.
2. Bread cutter, last used in June, contained leftover bread crumbs and grime inside.
Corrective Action(s): 1. A bucket containing 200 ppm QUATS was prepared at time of inspection. This is a repeat issue from last year - please ensure that a sanitizing pail is prepared prior to any food production to ensure that food contact surfaces and work surfaces are cleaned and sanitized. This eliminates pathogens such as bacteria and viruses that could potentially cause foodborne illness.
2. Disassemble, clean, and sanitize the bread cutter by the end of day today. Ensure that all equipment and food contact surfaces are cleaned and sanitized after each use.

Comments

Routine inspection conducted of a food premises that caters off-site. Facility is well maintained and also in excellent sanitary condition. The following observations were made during the inspection:

1. Temperatures (Max: 4C for coolers, -18C for freezers; Min: 60C for hot-holders)
- No hot-holding at time of inspection
- Walk-in cooler at 1C; "produce" cooler (not in use) at 4C, stand-up coolers all at 4C or less
- Walk-in freezer is currently not in use due to maintenance since August 9, 2019. Walk-in freezer has been emptied.
- Stand-up freezers at -18C or below
- Cooler units equipped with accurate thermometers
- Temperature logs for all coolers and dishwasher present and up-to-date

2. Hygiene and Sanitizing
- Handwash stations in food preparation areas and restrooms / changerooms are all adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at final rinse cycle of 72 and 77C at the plate after first and second attempts, respectively (Min: 71C at the plate)
- Food equipment generally maintained in good sanitary condition including all meat slicers, dough mixers, and kettle cookers. Trays, chafing dishes, equipment (e.g. knives, ladles) in excellent sanitary condition. Brushes available to clean hard-to-reach areas in equipment. Power cord to meat slicer was disconnected when not in use - good
- Ventilation canopy and ice machine in excellent sanitary condition. Scoop for ice machine is stored in a sanitary container above the machine

3. Storage
- Premises is well organized, including the kitchen, dry storage room, and equipment storage rooms
- All food items are elevated at least 6" off the floor
- Items in walk-in cooler are covered in food-grade saran wrap or in original containers. Raw foods are kept on separate shelving from cooked and ready-to-eat items
- Mop sink / janitorial area is well maintained and organized, and is the designated area for chemical storage
- Receiving area is well organized - cambro containers and chafing dishes are stored in sanitary condition

4. Pests
- Professional pest control company continues to conduct monthly audits. The last inspection conducted by the company on July 31, 2019 did not indicate the presence of any pests at time of inspection. The existing integrated pest management program includes exterior baiting, snap traps, and Ketch-All traps placed underneath plumbing fixtures and throughout the facility
- No signs of recent pest activity were observed by the Environmental Health Officer at time of inspection

5. Administrative
- Operators have FoodSafe 1 certification. Supervisor has FoodSafe 1 and 2

6. Recommendations
- As stated last year, new bulk storage bins should be acquired so that all open food products (e.g. flour) are protected from contamination. Some bins have broken lids that need to be replaced
