Observation (CORRECTED DURING INSPECTION): Pizza stored in the hot holding unit was below 60C internally. Internal temperature of food product was only at 50C. Pizza products were discarded. Individual sliced pizzas only serviced during lunch service. Ensure pizza products in the unit is kept at least 60C internally.

Routine inspection conducted and the following were noted at the time of inspection:
Pizza prep cooler at 4C.
Walk-in cooler unit at 4C.
Stand up freezer and small reach-in freezer at -15C.
All food items stored at least 6 inches off the ground.
No pest activity noted.
Hand washing stations satisfactory.
3 compartment sink satisfactory. Ensure equipment are fully submerged in the sanitizing compartment when they are disinfected.
100ppm chlorine sanitizer available.
