Walk in cooler - air temp is at 2C - good.
Prep cooler (hot/cook side) is at 4 C - ok.
Small prep cooler is at <4C - good.
Hot holding gravy is at 60C - good.
Cooking - chicken strip - is at >74C/165F and hamburger patties (2 checked) at 71C/160 or hotter (food safety plan shows 74C/165F - good).
Food and cooler temperature records are kept up to date. If cooking equipment is adjusted, food temperature is checked to verify the cooking temperatures.
Freezers - good.
Food Safe - Manager has a valid certificate (2027) - good.
Front area is clean and has 2 hand sinks with liquid soap and paper towels in dispensers.
Wiping cloths area stored in quats sanitizer changed frequently - ok.
Quats sanitizer is dispensed at 200ppm.
*** Reviewed the procedures for quats sanitizer and knife used for cutting food. Clean and sanitize frequently - ok. Must be dried before having contact with food - ok.
Back area has a hand washing sink - liquid soap and paper towels in dispenser provided.
