-1-door domestic 2 deg C (Ochai side)

NOTE: some fridge/freezer storage space located on the Ochai side of the operations

-Hot held potato chunks 64 deg C (<2 hour holding time)

NOTE: ensure any potentially hazardous foods are not placed back in the fridge that have been left out at room temperature for an undetermined period -i.e. eggs, sausages, milk

Chemical Controls:
-Low temperature chlorine sanitizing washer >50ppm residual
-Glasswasher not in use (single-use disposables used)
-Sanitizer buckets >100ppm chlorine residual

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used
