Observation: Buildup of oil/grease debris is caked/solidifed on between frying equipment (all along the sides of the equipment).

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: 3 staff members on site; all indicated they had FoodSafe but did not keep their certificate/card on site. Verification of foodsafe certification must be kept on site at ALL times.
Corrective Action(s): Follow up inspection to be conducted. At least ONE person on shift must be able to produce proof of FoodSafe certification; it is highly recommended to keep a folder/binder with copies of all staff's foodsafe certificates on site. Kitchens cannot be operated without a FoodSafe certified staff member on site.

-Prep cooler beside frying area: 4 deg C (ensure foods in prep cooler inserts are used within 2 hours--> do not overfill inserts with food if you will not be using it all in 2 hours)
-All other coolers <4 deg C
-Foods in coolers covered
-2 compartment sink plus high temperature dishwasher on site
-High temperature dishwasher achieved 73 deg C on rinse cycle ( minimum 71 deg C required)
-Quat sanitizer in spray bottle (pink solution) was at 200 ppm quats (meets requirement of 200 ppm)
-Overall organization/tidiness in back area especially the wire rack area could be improved
-Employee observed checking temperature of burger patty while cooking (minimum 74 deg C required for at least 15 seconds)
-No signs of pests
