302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottle was not present at the back-of-house at time of inspection. Only one spray bottle was functioning.
Corrective Action(s): Two spray bottles obtained - one for the front and one for the back area. Bleach spray bottles were labelled and measured at 200 ppm chlorine residual.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Handle of tongs was inside the meat products.
2. Two rubber spatulas at back-of-house are in poor condition. Pieces of rubber could detach and be released into food products.
Corrective Action(s): 1. Keep handles for all tongs outside meat products to avoid potential contamination.
2. Rubber spatulas discarded at time of inspection. Ensure that you routinely check your equipment to ensure that they are in good condition.

Observation: Paper towel dispenser has fallen off the walls (both front and back dispensers of the hand wash stations).
Corrective Action(s): Paper towel dispensers are to be firmly secured to the wall.

Comments

Routine inspection conducted. Facility generally maintained in good sanitary condition. The following was observed:

1. Temperatures
- Walk-in cooler at 0C
- Walk-in freezer at -18C
- Display cooler units at 4C
- Display glass-door stand-up freezer at -20C
- Temperature logs were NOT currently maintained for the month of July. Operator had resumed logs at beginning of inspection - you must ensure that you maintain temperature logs daily to verify that your equipment is working correctly

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach spray bottle at 200 ppm chlorine residual (at the front). No sanitizer available in back area at time of inspection (see violation code above)
- 3-compartment sink equipped with drain plugs. Sanitize present in 3rd compartment was measured at approximately 50 ppm chlorine residual
- Ventilation canopy in good sanitary condition. Utensils and spatulas above 3-compartment sink in good sanitary condition
- Meat slicer and meat prep table at front-of-house was in use. Operator's employee had cleaned and sanitized them at time of inspection

3. Storage
- Storage practices in walk-in cooler are good. All raw products stored below cooked / ready-to-eat products
- Food products elevated at least 6" off the floor
- Spices and food products are appropriately covered when not in use

4. Pests
- No evidence of any recent pest activity at time of inspection
- Professional pest control company conducts routine checks. Last pest control report was on July 15, 2019, and indicated no signs of recent pest activity
- No rodents observed in mechanical traps

5. Administrative
- Permit posted and up-to-date
