Observation (CORRECTED DURING INSPECTION): Multiple food items stored at 7-9C inside the undercounter cooler at the front of the kitchen for less than 4hours (verified with temperature log):
- cooked chicken patty = 6C
- cooked pork patty = 7C
- cooked steak = 5C
- chopped lettuce = 6C
Corrective Action(s): The undercounter cooler is not maintaining < or = 4C. The operator moved ALL potentially hazardous food items from this cooler to the walk in cooler.

Observation (CORRECTED DURING INSPECTION): The surface sanitizer in metal bin at the front of the store measure 0ppm QUAT solution.
Corrective Action(s): The operator prepared new surface sanitizer at 200ppm QUAT solution. Ensure to regularly check the sanitizer concentration using appropriate test strips.

Corrective Action(s): Fix the cooler. This cooler must maintain < or = 4C at ALL times. Do not store any cold potentially hazardous food items in the meantime (ie cheese, meats, dairy).

- Three compartment sink available for manual dishwashing. QUAT sanitizer measured at 200ppm concentration.
- Dry storage area has adequate space and wire racks. Food items are stored min 6 inches (15cm) off the floor.
- No signs of pest activity.
