Routine inspection conducted at the food facility and the following observations were made during the inspection:

Dine-in services were suspended temporarily.

Temperature:
- Chest freezers (x3) maintained below -20C.
- Stand-up freezer at -19C
- Stand up coolers (in prep area & back storage area) recorded below 4C.
- Prep cooler at 4C (top) and 0C (bottom).
**Ice build-up was noted in all freezers. Consider defrosting/service the freezers.
- Two rice containers were hot held above 60C.
- The facility was cooling chicken broth prior to moving it to the cooler. The temperature was noted at 51C.

Hygiene and Sanitizing:
- Hand wash stations (front & back area) was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer bucket available and the concentration of bleach solution noted at 200 ppm.
- 2 compartment sink was used for dishwashing. Staff demonstrated proper washing and sanitizing steps. The concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher was out of service at the time of inspection. Facility is awaiting new part.
**Fix the dishwasher prior to restarting the dine-in services. Contact the district EHO once the dishwasher is fixed.
- Ventilation hood was clean and had no visible sign of dirt/grease build up.
- Light fixtures in the food prep area were missing covers.
**Consider installing light shields/covers to prevent the risk of food contamination from broken glass.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
- Screen door was installed at the back area and found closed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
