Observation: One adult cockroach noted in adhesive trap under three compartment sink. Date on trap was July 2017
Corrective Action(s): Remove current trap and replace with new trap. Continue to monitor for any further activity. Pest control contract in place with weekly visits. Follow instructions of the Pest Control Technician. Ensure floor area under sink is kept dry.

-General sanitation of premises was satisfactory
-Handsinks were supplied with liquid soap and paper towel
-Walk-in cooler was at 3C. Front under counter cooler was at 4C
-Walk-in freezer was at -9C Manager reported freezer is on a defrost cycle. Monitor to ensure temperature drops to -18C.
-Stainless upright freezer was -9C (not in use at the time of the inspection)
-Hot holding of burger patties and gravy was >60C
-Burger toppings time stamped.
-Quats sanitizer (200ppm) present from dispenser at 3 compartment sink. Test strips present to monitor quats concentration.
-Wiping cloths stored in sanitizer solution (200ppm quats) for use on counters and food contact surfaces.
