Observation: Dust /debris accumulation on the kitchen ceiling (middle and corner by the walk-in cooler).
Corrective Action(s): Clean off the dust and debris on the ceiling above the food preparation. Ensure to clean this on a regular basis to avoid accumulation.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Paper towel dispenser at the kitchen hand sink has been moved to the side. Holes noted on the dry wall. No back splashing installed.
Corrective Action(s): Install back splash at the kitchen hand sink. Currently just dry wall. Use non-porous and washable material to prevent rotting of the dry wall and for ease of cleaning.

Hand sinks adequately maintained.
Walk-in freezer was at -18 deg C.
Coolers were at or below 4 deg C.
New upright freezer (at -18 deg C) installed in the back of the kitchen across from the upright cooler.
Dishwasher reached 78 deg C at the plate surface.
Temperature log was available and up to date.
Front area: Line coolers and soft ice cream was at or below 4 deg C.
Sanitizer (quats) measured 200 ppm (spray bottles in the kitchen and front area).
No signs of pests noted at time of visit. Pest control monitoring in place.
Manager have valid Food Safe 1 certification.
General sanitation was satisfactory at time of visit.
