Observation (CORRECTED DURING INSPECTION): 1) Blue wiping cloth noted to be soiled and stored on cutting table at ambient temperature which is used to wipe cutting knives and cutting boards
2) Wooden cutting boards were found to be stored with wet, oily, or greasy film on the surface and tightly stacked together. One was in contact with a moldy white cutting board, which is not used.
Corrective Action(s): 1) Do not store wiping cloths at ambient temperature.
2) Re wash and sanitize cutting boards and ensure they are properly stacked.
