Comments

Update the foodsafety plan to reflect the current food handling procedures and include added menu items.
Improvement noted to food handling procedures- the prep counter in the kitchen is designated for handling of cooked foods. Wiping clothes are kept in a bleach solution. Ensure that the solution is fresh 100-200ppm. Plans are in the works to install hands free faucets.
Install a wall behind the prep counter in the kitchen to protect food items stored on the shelves behind from splatters. The wall surface must be smooth, non-porous and cleanable.
Ensure pork skewers and chicken skewers are cooked through after they finish cooking in the oven.
Cool cooked foods rapidly from 60-20C in 2 hrs and 20-4C in 4 hrs.
