Observation (CORRECTED DURING INSPECTION): A baked sausage roll was at 24 degrees C internally and was baked ~5.5 hours ago according to the person in charge.
Corrective Action(s): Ensure potentially hazardous food is cooled from 60 degrees C to 20 degrees C in two hours and 20 degrees C to 4 degrees C within an additional 4 hours (a total of 6 hours).

Observation (CORRECTED DURING INSPECTION): A baked sausage roll was at 24 degrees C and it was stored at room temperature. The person in charge mentioned that it was baked at 10 AM (5.5 hours ago).
Corrective Action(s): Ensure potentially hazardous food (including baked products with protein, high moisture, and low acidity) are stored at 4 degrees C or less. The baked sausage roll was discarded at the time of inspection.

Comments

Liquid soap, hot and cold running water, and paper towels were available at the handsink and the 2-compartment sink.

Under-the-counter cooler and sandwich cooler were 4 degrees C or less.
Upright freezer was -18 degrees C or less.
***Upright cooler was at 9.9 degrees C and is only used for non-potentially hazardous foods (i.e. raw vegetables and raw fruit for personal use and carbonated water). Do not store any potentially hazardous foods inside this cooler (e.g. eggs, milk, meats, cheeses, prepped vegetables, unsalted butter etc.) unless it is maintained at 4 degrees C or less.
A probe thermometer was available on-site.

Dishwasher final rinse was 71.6 degrees C (71 degrees C or hotter) at the plate.
100 ppm chlorine sanitizer was available in the spray bottle.
No signs of recent pest activity was observed.
Ice machine was clean and the scoop was stored separately.
