Observation (CORRECTED DURING INSPECTION): The prep cooler was measured at 15C at the time of the inspection. The operator stated that the cooling fan was turned off which may have affected the ambient temperature. There were no meats or cold potentially hazardous food items stored inside.
Corrective Action(s): The ambient temperature was cooled down to 4C after 15min. Ensure the ambient temperature of the prep cooler is maintained at < or = 4C at all times.

Comments

- General sanitation is satisfactory.
- Handwashing station stocked with hot/cold running water, soap, and paper towels. Ensure to place waste bin close to the handwashing station.
- All coolers (prep, walk in) < or = to 4C.
- All freezers (chest) < or = to -18C.
- Hot holding unit for slices at 60C.
- Temperature log is kept on site, up to date.
- Two compartment sink available for manual ware washing. Sanitizer available at 100ppm chlorine solution with drain plug to fill the sanitizing compartment of the sink.
- Surface sanitizer available in white bucket at 100ppm chlorine solution. Ensure to store all wiping cloths inside the solution until ready to use.
- Dry storage area needs better organization and cleaning. Too much clutter and items.
- No signs of pest activity.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.
Note: FOODSAFE certificates obtained prior to July 29, 2013 expires on July 29, 2018. Must take refresher course to receive recertification.
