-Sushi prep cooler at 4C (top and bottom).
-Under counter cooler at 4C.
-Front sushi display was at 4C.
-Walk-in freezer (Shared with store) was at -20C. Shelving area labelled to indicate for sushi area.
-Sushi rice had a pH of 4.0. Sushi rice tested using calibrated pH probe (buffer solutions available on-site).
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed practicing good single use glove practices.
-Quat sanitizer pail labelled and tested at 200ppm. Sanitizer pail changed every 2 hours.
-Quats sanitizer dispenser tested at 200ppm.
-Cutting area disinfected every 10-20 minutes using Quats sanitizer.
-Sink plugs built into 3-compartment sink.
-Foods properly covered and protected from potential contamination.
-General sanitation satisfactory at the time of inspection. A couple rodent droppings observed in the cabinet area - clean rodent droppings and sanitize affected areas and monitor for continued pest activity.
-Facility is currently serviced by a professional pest control operator on a weekly basis (same technician as the store).
*Operator took temperature records home - temperature records are to be kept on-site for review.
-FoodSafe Level 1 valid until March 24, 2023.
