205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Milk (chocolate, strawberry, and standard 2%) in display cooler, along with pre-packaged sandwiches, were all at a temperature of 5-8C at time of inspection inside bottom four rows of open display cooler.
Corrective Action(s): Aforementioned items were placed in the walk-in cooler immediately. Ensure that ALL potentially hazardous foods stored in the open display cooler maintain a temperature of 4C or cooler at all times to prevent the growth of bacteria that could cause foodborne illness.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 50 ppm quaternary ammonium compound present in spray bottle labelled 'sanitizer'.
Corrective Action(s): 200 ppm quats was prepared at time of inspection. Ensure that this is regularly maintained for proper sanitizing of food contact surfaces.

Observation: Open display cooler is not able to evenly maintain 4C throughout all levels of cooler. Bottom 4 rows vary from 5-9C.
Corrective Action(s): Service display cooler so that all rows and areas of the cooler can maintain 4C or less to prevent growth of any foodborne bacteria that could cause illness. No potentially hazardous foods are allowed in the bottom 4 shelves of the cooler, except in the back row.

Routine inspection conducted. Facility is generally in good sanitary condition The following observations were made:

1. Temperatures
- Display cooler ranges from 5-9C (see violation code above)
- Walk-in cooler at 3C
- Mini cooler next to display cooler at 3C
- Mini freezers at -18C
- Chest ice cream freezer at -18C
- Hot-holders range from 70-90C (Min: 60C)

2. Hygiene and Sanitizing
- Handwash station in restroom and front service area adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- 3-compartment sink with drain board present in back office area
- Tongs, trays, utensils generally in good sanitary condition
- Slushie machines are well maintained, ensure that the tray is periodically cleaned as sugary residues can be an attractant for flies
- Employees wash hands before and after handling food products

3. Storage
- All food items are properly elevated off the floor
- Sandwiches, milk, and all food products are in original packaging
- Store area / shelving is well organized
- Mop sink and chemicals stored in janitorial room separate from any food products

4. Administrative
- Permit posted
- Operator has FoodSafe 1

5. Pests
- No evidence of pest activity at time of inspection
- Professional pest control company conducts routine audits

Note: A follow-up inspection will be conducted to verify that the open display cooler is in good working order.
