Comments

Liquid soap and paper towels are now provided in dispensers at all hand wash sinks. Good.
The fume hood has been professionally cleaned and serviced.
Floor in the kitchen has been cleaned.
Raw chicken and meats are now stored on the bottom shelves.
All food items, equipment and boxes are now stored off the floor on shelves.
All deep freezers are now on wheeled platforms for easy cleaning.
Food items are no longer prepared on top of freezer lids. Food grade cutting boards are in use.

Grease trap is scheduled to be cleaned/emptied on Sep 29, 2018.

Following tasks are still outstanding:
1. Ensure to use a commercial floor cleaner to clean the floor thoroughly once the grease trap cleaning is complete.
2. Clean the floor drains by using a foaming detergent and hot water. This will also help to control drain flies.
3. Always keep the floor drain covered to prevent food debris from plugging the drains.
4. Print separate temperature logs for each month. Temperature readings must be written on the paper log.
5. Repair or replace any fridge that are not in good working order.

Ensure to keep the restaurant in good sanitary condition at all times.
