- Temperature Control: Monitoring required.
- Mechanical Dishwasher: High Temp: Ok. All food contact surfaces are to be cleaned and disinfected after use or on a timely manner. (As discussed.) All cleaned implements are to be stored in a manner to prevent post contamination.
- Wiping cloth storage: Strong. Reduce concentration. Follow dilution as per Dishwash Sign.
- Food Storage: Only small quantities of perishable food items are permitted to be stored at room temperature for less than 2 hours. (ie: eggs/tofu) Continue efforts to keep all items off of floors.
- Sanitary facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Sanitation: Regular cleaning of all areas, including hard to reach areas, is required. (ie: grease build up - on prep lines, around hot water tank) All work areas are to be kept clean and organized - remove any unused items.
- Structural: See Violation Notes. No "bare" wood permitted.
- Pest Control: Monitoring required. No signs noted this date.
- Garbage, Recycling and Composting Disposal: Storage area is to be kept clean and organized at all times. All bins are to be kept covered at all times.
- Food Safe Trained staff on site.
- Corporate Food Safety Plan and Sanitation Plan is to be kept on site for reference and updated according to menu changes. Generic flowchart on site. Staff are to be properly trained.
