Observation (CORRECTED DURING INSPECTION): - Three compartment sink was obstructed with boxes of stock stacked in front of it. Drying racks were not available as miscellaneous supplies were stored there.
- 0 ppm Quats detected in spray bottle in front service area.
Corrective Action(s): - Ensure three compartment sink is always available/accessible for warewashing. Do not store anything in front of or inside the sink. Ensure drying racks are available for air drying dishes.
- Staff were directed to re-fill sanitizer spray bottle at the time of the inspection. Ensure sanitizer is always present in front service area and at adequate concentration (200ppm). Use test strips to check.

Observation: - Spills of pop syrup noted underneath pop storage shelving in back storage area.
- Floor in front service area dirty with miscellaneous debris
- Back storage area disorganized with items stored in front of three compartment sink, oil (sealed) stored adjacent to food products.
Corrective Action(s): - Clean areas noted above to remove spills and debris.
- Organize back storage area so that all items are off of the floor, equipment is not obstructed and there is designated space for chemicals which is away from food products. [Correction date: today]

Comments

- Handwashing sink in front service area supplied with hot and cold running water, liquid soap and paper towel. Staff wear gloves when handling food and tongs are used for food service. Reminder to ensure hands are washed between cash handling and food handling. Glove use is not a replacement for handwashing.
- Coolers were operating at acceptable temperatures (4C or colder)
- Walk-in cooler 1C

- Freezers were maintaining product in a frozen state:
- Undercounter freezer -11C
- Ice cream freezer -23C
- 2 door stainless freezer -14C
- Single glass door freezer -16C
- Hot holding temperatures of potentially hazardous foods was adequate (60C or above)
- Taquitos and hot dogs 71-73C
- Chicken, pizza, meatballs 60-65C
- Chilli and cheese dispenser 63-64C
- In use service utensils (tongs, pizza slicer) stored in clean location. Reminder: these items must be washed and sanitized every 4 hours
- Quats sanitizer present from dispenser at 3 compartment sink. Concentration was 200ppm.
- No signs of pest activity noted at the time of the inspection.
- Manager unable to provide copy of recent pest control reports. Last report present was June 2018. Manager to email copy of reports to undersigned.
- One staff member on duty present who has completed Foodsafe level 1. Valid certificate produced. Review Foodsafe level 1 certificates for staff to ensure certificate are valid. Certificates issued prior to July 28, 2013 have now expired and recertification is required. See foodsafe.ca for recertification information.
