Follow-up inspection to routine conducted on March 23, 2018 to address deficiencies in the sanitary condition of the facility.

Deep cleaning has occurred to address the following issues:
- Crevice between two deep fryers has been cleaned, and the sides have been covered with aluminum foil to absorb grease and oil splatter. Aluminum foil will be periodically replaced.
- Spilled oils and grime under cook line have been removed
- Area around and under low-temperature dishwasher has been cleaned, debris has been removed
- Ventilation slats now in sanitary condition

Please allocate some time after closing to clean the kitchen after closing to maintain it in sanitary condition.

Other remarks:
- Technician has been called in to service the walk-in cooler. Walk-in cooler at 34F/1C at time of inspection (Max: 40F/4C)
- Items inside walk-in cooler covered with seran wrap
- Lid of prep cooler was closed at time of inspection. Ensure that the lid remains closed when not in use
- Dough mixer is in sanitary condition
- Temperature and dishwasher logs were not up-to-date. Logs were only maintained until April 3, logs missing for April 4-6. Please log temperatures and dishwasher at least once daily at the beginning of the day (ideal: 2-3 times daily). Chlorine test strips were available on premise.
