All coolers measured 4C or colder
** Middle line of inserts measured 6-9C - please keep heat lamps turned off prior to food service in the morning and keep inserts covered with trays as long as possible in the morning prior to food service to help maintain temperature. Staff indicate that sauces are a high turnover item, with most inserts being replaced with new product after lunch rush.
Freezers are -18C or colder
Hot holding was all measured above 60C

Quats sanitizer dispenser and bottles measured 200ppm quats sanitizer
Handsinks supplied with soap and paper towels
Discussed cooling of foods - foods requiring cooling are placed on shallow pans in the walk in cooler
