Observation (CORRECTED DURING INSPECTION): Cooling rice stored in ice cream bucket, cooling after cooking, at room temperature.
Corrective Action(s): Cool rice in shallow pans and in cooling units to ensure that it drops from 60-20C in 2 hours or less and from 20-4C in 4 hours or less.

1) Knives stored in crack between prep cooler and upright cooler.
2) Tape wrapped around handle of pan

1) Do not store knives between equipment as it cannot be adequately washed. Operator has already purchased magnet to install.
2) Remove tape as it is not an easily washable material
