Observation (CORRECTED DURING INSPECTION): PHF's were being stored out at room temperature.
Corrective Action(s): After lunch/dinner rush, phf's must be moved inside the coolers.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher rinse is below 71 degC. Operator hasn't converted dw to a low temperature dishwasher as planned.
Corrective Action(s): Get the machine serviced. Until then wash the dishes in the dishwasher and soak in the sink using 1 tsp bleach per L water for at least 2 minutes before airdrying.

Observation: There was no hot water at the sinks at the time of the inspection (~3:30pm). This is a repeat issue.
Corrective Action(s): Get this issue addressed by installing a larger tank or an on demand system by March 6, 2023.

Observation: Miso soup is being portioned out at the Waitress station. As mentioned previously, if food is being dispensed in this area, a handsink will be required.
Corrective Action(s): Stop this practice or install a handsink.

General Comments:
Coolers are below 4 degC

Temperature log's being maintained
200ppm bleach solution is available for sanitizing.
Operator indicated that he's still waiting for the City to issue permits for the renovation. Two over the counter fryers are being used to fry foods in large quantities with just domestic exhaust hoods attached overhead for ventilation exhaust. You cannot be frying foods in this quantity without proper ventilation. Fwp with the City regarding permits and timeline.
