Observation (CORRECTED DURING INSPECTION): Food Items stored in the prep cooler at the front serving area measured with internal temperatures of 12C - 14C. The cooler unable to maintain temperature at 4C or less.
Corrective Action(s): Yogurt based sauces were discarded. All other condiments and sauces were transfer on ice as a temporary measure.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Two sanitizing pails measured with Quat concentration of 50ppm and 100 ppm respectively. For properly sanitizing food contact surfaces, 200-400 ppm is required.
2. Low temperature dishwasher dispensed 10 ppm of bleach sanitizer at plate level. 50-200 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): 1. Discard and refill the sanitizing buckets with 200 ppm quats sanitizer from the dispenser. Clean and sanitize all food contact surfaces again.
2. Manually clean and sanitize all plates and utensils on site. Set up the 3 compartment sink for manual dishwashing.

Observation: 1. Prep cooler at front serving area measured with an ambient air temperature of 12.2C. Operator stated a new cooler had been purchased.
2. Low temperature dishwasher dispensed 10 ppm of chlorine sanitizer at plate level.
Corrective Action(s): 1. Service / replace the prep cooler to ensure an ambient air temperature of 4C or less can be maintained. Do not store any potentially hazardous food in this cooler until then. Correct by: March 18, 2024.
2. Service / fix the low temperature dishwasher to ensure 50-200 ppm bleach sanitizer is dispensed at plate level. Correct by: today.
